Randy’s Pizza, the longtime Oakdale pizzeria, won’t move after all.
Already in the process of making his restaurant one of the first 100 percent gluten-free pizzerias in the country after battling gluten sensitivities and wheat allergies himself, owner Randy Hueffmeier had planned to relocate, too.
“The lease did not work out. We’re going to stay put where we’re at and look for expansion opportunities in the future,” he said.
But don’t expect things to stay the same at the 32-year-old establishment. In fact, some big changes have been made and there’s more to come as Hueffmeier continues to update his storied pizzeria.
“It’s like starting over,” he said. “I’ve got to find different ways (to cater to customers).”
First up, he’s completed turning the menu — wings, salads, sandwiches, pizzas, desserts and more — to 100 percent gluten free.
Hueffmeier is also now operating a small market out of the space with products such as frozen pizza and prepackaged flours. He plans to expand the offerings to include house-made breads, frozen dough balls, pastas, pancakes, baked goods as well as bread and pizza mix kits.
Next up, “we’re adding (gluten-free) Chicago pizza (and wood-fired pizzas) this spring. … Right now, we’re expanding our vegan menu,” he said. “We’re coming out with our line of pastas at the restaurant.”
Hueffmeier added that he’s also planning for a pizza trailer, looking into a beer license and that “we’ll slowly expand to more hours at the restaurant.”
